Meatless Monday: Vegan Irish Recipes for St. Patrick’s Day

In honor of St. Patrick’s Day, I tried my hand at writing a limerick as a prelude to the vegan Irish recipes I’ve collected for you.

There once was a wannabe vegan,

Who'd quit her unwholly meat eatin’.

She took up with nut cheese,

Shed, too, eggs, if you please,
